On Islay we harness the mist. The mist is captured and used in production: Some is released in our special Mist warehouse to slow down evaporation. Other mists, particularly the early morning mists, are used as natural flavour enhancers in the copper stills during distillation. The evening mist, possibly the finest of them all, is captured with white linen sheets and used to reduce the strength of our whisky just before bottling.
